
“Cielo”, (meaning sky in Spanish, fitting for a city that is 1,900m up and is the highest in the western region.
This yellow Honey is produced in the Huehuetenango region. As one of the three non-volcanic regions, it‘s probably known as the most famous region in Guatemala, and offers the highest altitudes in the country with an average height of 1800 - 1900 masl.
The extreme remoteness of Huehuetenango virtually requires all producers to process their own coffee. Fortunately, the region has an almost infinite number of rivers and streams, so a mill can be placed almost anywhere. This yellow honey is very good as single-origin brew, or as an ideal blend component that layers perfect with more complex coffees.
